Canned Mirepoix

Our garden has produced very well this year and since I am not spending my autumn pregnant or caring for an infant for the first time in a few years, I am really committed to harvesting, using and putting up what's out there.

Hence the canning.

We harvested 5 gallons of carrots, something I would want in the bleak midwinter for making delicious soups and stews.  So I've canned them and dehydrated them as elements for starters for soups and stews.  This involves pressure canning which I know is not everyone's thing, and these recipes could be preserved by freezing if you prefer.  I personally am running out of freezer space, egads.

The first thing I tried was the starter for a wild rice soup from Meals in Jars by Julie Languille.  It's a good basic mirepoix, although I choose to can it with regular strength chicken stock instead of concentrated soup base as the OR calls for.  That way, it's more versatile and can be used to start soup, pot pie or chicken and dumplings equally well (recipes to come...stay tuned).

Risotto

seafood stock, chopped fresh spinach for veggies, savory
for flavoring
I've worked with a delicious seafood risotto recipe for many years.  It's from a fundraiser cookbook called Dewey or Don't We published by the Dubuque Public Library.

I used to follow it to the T, and finally understood that really, it was more like guidelines (as so many recipes truly are).

And then I started being able to use the technique given in that recipe and substitute my own flavors and ingredients, depending on what was in season and available.

No matter what ingredients you use, this is definitely a prep-ahead-friendly recipe.  Chop and measure everything ahead of time, combining ingredients by category.  You can also freeze this as a meal kit...combine ingredients by category, put them in vacuseal bags or ziptop bags, and freeze.  Thaw before cooking.

The use-what-you-have components are:

  • fat for sauteing: use butter, olive oil, canola oil, lard, mojo de ajo
  • aromatics: use onions, shallots, celery, carrots, leeks or any combo thereof
  • stock: chicken, seafood, veggie (not so much beef here)
  • protein: fish, chicken, shrimp, scallops, crab (again, not so much beef)
  • veggies: chopped bell pepper, snow peas, chopped greens, broccoli, peas, corn kernels, pre-cooked squash cubes
  • flavoring: citrus zest, minced herbs

Some favorite combinations are shallots with shrimp, green peas and thyme; celery/onion/carrot with chicken, pepper and savory; crab, leeks, spinach and lemon zest.

Chop, measure, and fridge everything in advance for next-day or same-day cooking.  You can also freeze the components ahead.  To save space with liquids, either freeze wine and stock in ice cube trays beforehand to include in the freezer kit or pour the liquid into a ziptop bag, carefully press air out of the bag, seal and lay flat on a tray to freeze.

Blood Mary Cocktail Bites

This is adapted from Time Ferriss' The Four Hour Chef.  His recipe uses a thickener called agar agar which I do not typically keep in my kitchen and would have to go a bit far afield to acquire, so I use the more easily found unflavored gelatin.

Agar agar is a vegetarian thickener, whereas gelatin is an animal byproduct, one reason to choose agar agar instead of gelatin if that's your thing.  Agar agar evidently sets up with a more solid, toothier, less jiggly texture than gelatin too (I think this is the reason Ferriss uses it...the section in the book on hunting game and cooking it in the field suggests to me that he's not a vegetarian LOL)  It may also set up somewhat more quickly than gelatin, but I've never actually used it so that's speculation based on what I read on the interwebs when I was trying to figure out whether I could successfully substitute gelatin for the agar agar.

I don't know what the exact conversion from agar agar to gelatin (or vice versa) should be, but I know 1 packet of Knox gelatin thickens 1 cup of liquid so that's what I used (the OR calls for 2 tsp of agar agar to thicken approximately 3/4 cup of liquid).

Coca Cola BBQ Chicken Crockpot version

As promised, the results of my home experimentation.  I don't think I'll make this recipe any way but in the crockpot from now on!

This version of this recipe double-ups the goodness by 1) becoming crockpot-friendly and 2) reducing the amount of fat in the recipe. 


You'll need to buy skinless bone-in chicken parts, or more likely yank the skin off your cut-up chicken.  It's not hard.  Hold the chicken in one hand (my left, since I'm a rightie), and use a paper towel to get a better grip on the skin with your other hand (my right, since I'm a rightie).  Pull.  Don't be afraid.  Just do it.  Yank.  Yank some more.  It will come off.  Don't sweat getting every tiny bit of skin off.

Now what to do with that skin?  You can fling it, or if you want to be extremely resourceful and frugal, you can a) render it like bacon for chicken fat, a.k.a. schmaltz or b) spread it flat on a rack placed over a baking sheet and bake it until crisp to make a poultry version of pork rinds.  Or you can chop it up, saute it quickly and feed it to your dogs.

If we're taking the skin off, why don't we just use boneless chicken and save ourselves the fuss of working around bones in the cooked dish?  Because i) the bones will fall right out after a day of crockpot cookery and really not present much of a problem and ii) the bone-in structure will help keep your crockpot from way-overcooking these bad boys.

Coca-Cola BBQ Chicken

A little more than ten years ago, my then-boyfriend and I decided it was time to get married.  I was still a grad student, anticipating graduation.  I had little interest, less money and even less time to spend on cooking real food.  But I decided that I should do something very old-fashioned...learn to cook for my future husband.  And I started collecting recipes. 

This is one of the first recipes I harvested, scrawled down frantically in real time while watching a cooking demonstration on a Nashville talk show (did anybody else ever see Crook & Chase?)  It wasn't all that long ago, but informatically it seems like the Dark Ages, or at least the early Enlightment, when recipes featured on morning talk programs weren't available instantly on the show's website.

I can't say now how closely the recipe I still have in my 3-ring binder replicates the original recipe, but it's still a good 'un.  Use a low or zero calorie soda, if you prefer.  Even though we don't keep soda routinely in the pantry any more, I still make this occasionally with a single bottle bought from the impulse aisle at the grocery store. 

I think this recipe would also do well in the crockpot, but I've never *actually* tried it that way.  I'd probably skin the chicken and skip the browning...or maybe not LOL  I'm going to do up some freezer kits this weekend b/c, duh-duh-da-duh! I'm going back to work after 3 years of full-time SAHM-itude, and I'll try this one as a crockpot kit and post results.

Deviled crab hors d'oeuvres

I did not plan to write a post about this one, but it was SO good and SO easy, I find that I can't resist sharing.  This was, in my opinion, far and away the tastiest part of our Christmas dinner, baking up with a lighter texture than you might expect and just extraordinary flavor.  As it prepped quickly the day before for no-work Christmas Day cooking, the dish falls easily within the purview of this blog :D

The recipe is from (where else?) the Reader's Digest A Family Christmas.  It's a recipe from James Beard, though I've ofc tweaked it to accommodate food allergies and my cooking preferences.  I used scallops instead of shrimp and omitted celery, adding more green pepper and onion in its place.  I chose to use a pound of pre-picked crab claw meat, but if you have access to fresh crab, you can certainly pick your own.  Real crab meat is not a cheap ingredient, but if you can catch a sale this would be a very special treat to make for your family. 

This makes a LOT (a full 1 1/2 quart casserole), especially for appetizers, and you could halve the recipe or freeze it in smaller portions for future cooking.  I'm thinking individual ramekins that you could bake off while making dinner for a quick starter course for 2...that sort of thing.  You can serve it plain, with crackers, on lettuce leaves or, as I did, with thin slices of cucumber.

Tempeh Salad

Packed for eating on the run tonight.
After the richness of Thanksgiving, I need some vegetables that aren't covered in cheese sauce or deep-fried onions.  This recipe is just the ticket, plus it goes together fast and can be made entirely in advance for a chilled salad. 

Tempeh is a soy-and-grain based food product that has a sturdy texture (unlike tofu) and a robust flavor (also unlike tofu). I'm not going to say that when you eat it, you'll think you're eating a steak but it hits the same textural and flavor points that a lot of meat products do. In fact, as I was cooking this one day, I had a delivery person at the door who commented that dinner smelled really good and he thought he might make some sausage for dinner, too LOL

I like wilted salads, so I top the greens with the hot tempeh mixture.  I get a little crunch by leaving the bell pepper and celery in this recipe raw.  You could saute the pepper and celery as well, though and wait for the whole mixture to cool before adding to the salad for a different effect.

Easy-easier-easiest sides: celery

A lot of people think celery is only good as a transport device for peanut butter or cream cheese.  And there's that business about the act of eating celery burning more calories than you actually get from the celery.  Celery has gotten a bad rap, folks.  It has a good portion of vitamin C and other stuff that may help prevent cancer and high blood pressure (source).  It's cheap even when organic, available year-round and it holds well in the fridge.  It's a great side dish waiting to happen!




Easiest: Crudité

OK, raw is easiest and "Ants on a Log" are cute.  But try dried cranberries for "Fire Ants on a Log" for a change of entomological pace.  Peanut butter is classic, but give hummus or an alternative nut butter a whirl.  Ranch dip is a kid favorite, but some garlic aioli (mayo with minced garlic and a splash of lemon juice) might be nice for the grownups.

EasierBraised Celery (makes as many servings as needed)

2 ribs celery per serving, trimmed and cut into 3" lengths
1/2 tbsp butter per serving
1 tbsp shredded cheddar per serving

Put celery in a pot and cover with water.  Bring to a boil, reduce heat to medium, cover and simmer 15 minutes.  Drain and toss with butter.  Sprinkle with parmesan to serve.

EasyBraised Celery with Olive Tapenade

Follow directions above but serve with 2 tbsp of Muffaletta olive relish per serving instead of cheese. Pin It
