Meals #1 and #2 are prep-aheadable (and #1 is freezer kit-able too!). Meal #3 is a quick and easy no-prep meal. Tequila is optional for meal #2...substitute white wine, vermouth, sherry, chicken stock or orange juice if you wish. The flavors in Meal #3 seem weird but are Ah.May.Zing together...don't count this one out just because it looks unusual!
Roasted Turkey with Orange-Rosemary Sauce
Makes 4-6 servings
Roasted Turkey with Orange-Rosemary Sauce, mashed root vegetables and mixed steamed veggies |
2 tsp olive oil
1/2 small onion, chopped
1 clove garlic, minced
3/4 cup orange juice
1/2 cup chicken broth
1 tsp butter
1 tsp chopped rosemary
1/2 tsp white wine vinegar
salt and pepper
To prepare a freezer kit, chop and combine onion and garlic in a freezer bag. Combine juice and broth in a freezer bag (for tips about how to manage broth/stock for a freezer kit, see here). Combine butter, rosemary and vinegar in a small freezer bag. Place all 3 in a large freezer bag with frozen roast and cooking instructions. Or fridge all ingredients for same-day or next-day cooking.
Roast turkey breast 1 3/4 - 2 hours at 325F (or cook from frozen according to these directions from Butterball). Reserve 1-2 tbsp pan juices. Let stand 10-15 minutes covered with foil before slicing.
Meanwhile, heat oil in a skillet over medium heat. Saute onion and garlic 1-2 minutes. Add juice and broth. Simmer 3-5 minutes, until reduced by half. Swirl in butter, rosemary and vinegar. Season with salt and pepper to taste. Add 1-2 tbsp pan juices from roast when it is done.
Serve sliced turkey with sauce over top.
Turkey Tequila Fettucine
Makes 4 servings
2 tbsp olive oil
1 red onion, cut in half then sliced
1 small jalapeno, seeded and minced (or less to taste)
4 cloves garlic, minced
1 lb. roasted turkey, diced
2 oz. tequila
1-3 tbsp flour (1 tbsp per 1/2 milk used instead of cream)
1 1/2 cups cream or milk, or combination
3 tbsp lemon or lime juice
2-3 tbsp chopped cilantro or parsley
14 oz. fettucine
parmesan cheese and chopped tomato for serving
To prep ahead, chop and combine onions, jalapeno and garlic. Chop turkey and place in covered container. Measure tequila into a small covered container. Measure flour into a small bowl. Measure cream/milk into a covered container. Combine lemon/lime juice and herbs (don't mix milk and lemon juice ahead of time...curdle city!). Fridge everything until ready to cook.
Heat oil over medium-high heat. Saute onions, jalapeno, and garlic until wilted and lightly browned, about 5 minutes. Stir in turkey. Add tequila and scrape up brown bits. Sprinkle flour over, and stir in. Cook 1 minute. Whisk in cream, lemon juice and herbs. Simmer 5 minutes until sauce is thickened slightly.
Meanwhile boil and drain pasta according to package directions.
Toss drained pasta with sauce. Top with parmesan and chopped tomatoes to serve.
Turkey Royale Sandwich |
Makes 4-6 servings
1 lb. roasted turkey, sliced as thin as possible
1/2 lb. sliced swiss cheese
sliced bread
strawberry jam or preserves
dijon mustard
Toast bread lightly. Spread one slice of toast with 1 tbsp mustard and another with 1 tbsp strawberry jam. Add cheese and turkey to taste to make sandwich. Pin It
