Broccoli packets for roasting or grilling

and broccoli packet
This doesn't have to be done with broccoli or Boursin.  It's just a framework for an easy make-ahead/freezable side dish.  You could do carrot slices, cauliflower, asparagus, squash or zucchini and any kind of soft, flavored cheese.  To make it freezer-friendly, use pre-frozen vegetables and omit the extra liquid. 







Broccoli Oven Packets
Makes 4-6 servings

1 large bunch broccoli, chopped into bite-size pieces (if freezing, use 16 oz. frozen broccoli)
4 oz. herbed goat cheese spread, such as Boursin
2 tbsp water, chicken stock, vegetable stock, white wine, or vermouth (omit if freezing)


Combine all ingredients in a large bowl.  Transfer to one large sheet of foil, or 4-6 small pieces of foil (line the foil with parchment paper if freezing).  Fold up the packets, making sure the edges are completely sealed.  Fridge or freeze.

To cook, thaw if frozen.  Bake 25 minutes at 375F or grill over medium heat for 25-30 minutes.  (Since I served this last night with the slow-roasted salmon, I baked at 375F for 15 minutes and let the broccoli finish with the salmon for 18 minutes at 275F.) Pin It
